Osriches don't fly becuase they are that big. But poor example.
I see what you mean though becuase most pokemon are infact based on normal animals. But at the end of the day most are just to big to be normal animals (like most of the bug pokemon can't exist because there isn't enough oxygen in the atmosphere) and have fucking attacks like flamethower and ice beam. Tell me the last time you saw a fish shoot a beam of ice out of its mouth.
Wait, there are normal pokemon that use those moves? And ostriches don't fly because they aren't meant to fly.

... normal is a subjective term. It's based on what isn't weird, which is based on what a large group of people call weird.
In America it's weird to eat living animals. In Japan, kids eat living octopus. In India it's un Holy to eat a cow. In England, it's normal to eat fish for breakfast. In Iraq, it's weird to eat cereal or drink milk for breakfast.
Normal type in Pokémon is not having an elemental advantage or specialty. Rather, it isn't natural for a Ratta to learn watergun with level up, but for a squirtle yes. Water Pokémon learn water attacks as expected. Normal Pokémon usually learn attacks that don't do special effects, like Poison or burning. It's usually to rais stats in battle. Of course, there are exceptions.
Also, I would assume that normal implies that there are more of said type than others in the wild.
So you might find more of a "normal" type than a fire type in any region. Not more species, more in population.
Size has nothing to do with one's ability to fly.

Sadly enough, they did receive an immunity to ghost and weakness to fighting. Which I think is completely unnecessary, but whatever.
